Easy Egg Replacement [Recipe]

A few days ago I received a question from Stacey, a follower of mine, asking for an egg replacement recipe:

Hi Helen,

I have a child with an egg allergy so I was wondering what you
recommend as an egg substitute in your recipes.

I know there are a few different options and I don’t understand

the chemistry of baking so am not sure what to try.

Here’s my answer to Stacey:

To make a “chia egg” as an egg stubstitute, all you have to do is combine 1 tbsp of chia seeds and 3 tbsp of water, let it sit for 15 minutes, then stir well and add to your recipe to replace 1 egg.

This works well for recipes that call for 1-3 eggs.

It won’t work for recipes that are egg-based like custards, meringues, etc.

Easy as pie!
