Healthy Oatmeal Cookies = “Sexy in White”

These are the cookies that started it all. I’d searched and searched until I stumbled upon a recipe that seemed promising. Most “healthy desserts” recipes I found were anything but! The recipe I’d found still had some ingredients that I knew wouldn’t help my fat loss goals (SINgredients), but overall it looked like it would work well with a few swaps.

I got everything ready, made a batch, and… meh. Just so-so. OK, but not what I was hoping for. That didn’t stop me from finishing the batch though. 🙂 But I’d have to say…

The 1st Batch of Healthy Oatmeal Cookies FAILED

A week or so later, I tried again. And because I’d written down the tweaks I made last time, I made some more tweaks on top of the first ones with the goal of turning bland healthy oatmeal cookies into something I’d bite into then go, “Mmmmmm!”

I watched them bake for the last few minutes in the oven. I think watching cookies bake is kind of like watching water boil – it seemed like forever. Eventually they came out piping hot and the sweet and rich smell made my mouth start watering.

My hubby came down to the kitchen from upstairs when he caught a whiff. Even Mr. Chico was hanging around waiting with baited breath for some crumbs to fall to the floor. Healthy oatmeal cookies are up there on his favourite treats list (minus the cocoa of course).

After they cooled enough that I wouldn’t burn my tongue (I hate it when I do that!), I took a bite and WOW! That’s what I was looking for! My hubby tried one and agreed. So much so that he decided he needed to try another one just to be sure it wasn’t a fluke. Men do that. 🙂

All in all, these cookies saved the big day and helped me get in the best shape of my life for my wedding. Here’s a pic of my hubby and I on our wedding day:

    Haven’t tried them yet, but since I’m not eating sugar or wheat, they look perfect! Are most of your recipes like this? The “Dessert” Angel almost scared me away until I checked it out!

      Hi Beth – yes, most of the recipes are like this, NO sugar and NO wheat!

    What do you mean by a “pinch” of stevia? I tried these but they were not sweet at all.

      Well, just that – if you use PURE STEVIA powder like I recommend, dip your thumb and index finger into the container and take a pinch and put it in.

      Then, taste the batter! It’s the best way to get the desired sweetnees, because everybody has different taste buds!

      For example, my hubby (the bottomless pit) doesn’t like things that are too sweet – so he prefers recipes with less stevia than I do.

      Everyone is different!

      So just test it out and don’t give up! If it’s not perfect, try it again and tweak it a bit.

    Can;t wait to try this recipe out but I am unable to use Stevia due to low blood pressure. Could I substitute with splenda instead as that is the one we use in our house?

      Hi Eleanor – I would not recommend Splenda as it is not a natural, healthy ingredient. You can substitute stevia with honey or maple syrup, but note that you will probably have to use quite a bit to get the same sweetness. I would suggest adding more to your batter and doing a taste test to see if you need to add more.

          I do not recommend cane sugar – it is not on my “divine” ingredient list – stick with stevia, honey or maple syrup as your best bets for healthy sweeteners.

      Hi Elenore – I also have low blood pressure but I am still using Stevia. Do you know something that I don’t? What does Stevia do with low blood pressure? I am concerned now!

    Do you think it could work with almond or coconut flour, I cant eat oats! They give scary heart attack like symptoms which I do not enjoy going through!

    I don’t like the taste of stevia, do you ever use erythritol crystals? Also, coconut oil sounds better then olive oil or maybe grapeseed not such a strong taste.

      Hi Sharon,

      I’ve never used erythritol crystals. I know what you mean about stevia, but I’ve found that different brands have dramatically different tastes.

      My brand of choice is by New Roots and is pure stevia concentrate. I tried NOW brand before but it had too strong of a chemical after taste.

      You can definitely sub coconut oil for olive oil in this recipe.

    I use Stevia in the Raw – but no-where on the package does it say “pure stevia”. Do you kno wif it’s the same or if I need to be looking for something else?

      Stevia in the Raw is not the same as the pure powder. Not sure what the substitute measurement would be if you were using the “In the Raw” type.

      Would the Dessert Angel recommend using Stevia in the Raw? I do use this product quite a bit.
      I would also be curious if the Dessert Angel tries to add protein powder into any of her items. I’m always looking to bump up the protein!

      Can’t wait to try these cookies!

      Stevia in the Raw is mainly Dextrose, with a little Stevia to increase the sweetness without bulking it up. Watch for the three letters “-ose” to avoid any forms of sugar; i.e., fructose, sucrose, glucose, etc. Hope this helps new readers!

    I used cross cut oats as opposed to rolled oats and substituted coconut oil for the olive oil. MMMMM delicious coconut choc healthy oat cookies

    • You can try adding almond flour or another type of flour to substitute for the cocoa. I haven’t tried this sub before, but it should work out 🙂

    You are an angel indeed ..i can not express my happiness to find you ..My concern is Stevia taste so different than sugar when added to things which are not cold . I mean it tastes good in juices , smoothies etc.. but in hot beverages equally bad . Can you let me know what brand you suggest for stevia usage in baking desserts or hot beverages

      For stevia, I buy New Roots Herbal brand – the pure white powder, not the spoonable version they offer.

      It dissolves well and bakes fine IMO.

    Hey! Thanks for sending a recipe! I was wondering if you have any healthy recipe like this but without oats or any type of carb? I dont eat any carbs. Just vegetables, protein, and unroasted nuts…(which is probably understandable why I am in desperate need for recipes!! 🙂

    Hello helen,

    What is the 4 pinches of stevia equivalent in terms of measurement? I have the wholesome sweeteners brand of Stevia and its in packet format. 1 packet is 1/2 tsp and is like putting 2 tsp of sugar.

      Hi Paul,
      The stevia I use in this recipe (and in most recipes) is a pure stevia (not mixed with other ingredients). I’m not familiar with the brand that you’ve mentioned, so check to see if it is pure. If it is pure, you can use the same amount – 4 pinches – each pinch is about 1/16th of a tsp. If it is not pure, then you’ll have to use more than 4 pinches. Try adding several more pinches and then doing a taste test (yes, taste the batter) to see if it is sweet to your liking and adjust accordingly. Hope this helps!

        The ingredients for wholesome sweeteners Stevia is organic agave inulin, organic Stevia extract (Stevia rebaudiana), and silica.
