Lemon Raspberry Gluten-Free Pancakes

Last night we got covered with a couple feet of snow here in Toronto. It’s probably been years since I’ve seen this much snow…and snow this WHITE!
 
For the last few years, we lived right in the heart of downtown Toronto. The heavy traffic on the streets made for mucky, black, slushy snow all winter. Not a pleasant sight.
 
This winter, we are in a quieter neighbourhood and on a small street without many cars driving by. Waking up to snow on the property is now a winter wonderland!
 
Today is a snow day for us. We (my daughter and I) cancelled our activities for the day to enjoy a nice warm (and slow) breakfast at home. Mornings are typically chaotic in our household as we all try to get ready and out the door. So this was a welcome change for a Monday!
 
The best part though, was watching my little girl see all this snow for the first time – so sweet!
 
Here’s my breakfast recipe:

Lemon Raspberry Gluten-Free Pancakes

Ingredients
  1. 1 1/2 cups almond flour
  2. 1/2 tsp baking soda
  3. 1/4 tsp sea salt
  4. 1/4 cup raspberry pieces
  5. 2 tbsp honey
  6. 3 eggs
  7. 5 tbsp lemon juice
  8. Oil for frying
Instructions
  1. In a bowl, combine all the dry ingredients and mix well
  2. Add in the raspberry pieces to the dry ingredients bowl and coat them with the flour mixture
  3. In another bowl, separate the egg whites from the yolks
  4. Blend together the egg yolks, lemon juice, and honey
  5. Add the wet ingredients (in #4) to the dry ingredients bowl
  6. Beat the egg whites with a pinch of salt until they have medium soft peaks, then gently fold into the batter until combined
  7. Preheat a pan (cast iron is best) on medium and coat with oil
  8. Drop 2-3 tbsp of batter onto pan and cook until it starts to bubble; flip pancakes over and cook until cooked through
Notes
  1. Enjoy with your favourite toppings (I like maple syrup and coconut cream)!
