Quick and Easy Superfood Pudding!

Sometimes you don’t want have a lot of time to whip up recipes.

Work. Family. Commitments. Errands. STRESS!

I know for sure the busiest time of my life was when I was planning for our wedding.

There were so many people to talk with, meetings to schedule and little tasks that seem like nothing but really add up and suck every last drop of energy out of you.

Don’t get me wrong – it was rewarding doing it all and the day turned out great, but I don’t think I want to do it again. Maybe you feel the same way? 🙂

Either way, when you’ve got lots to do is when it’s the hardest to stick to your diet.

It seems like the most convenient foods are also the worst for us. Why do they do that?

But if you’ve got a couple of quick and easy recipes that you know take 5 minutes or less to whip up, there’s nothing standing in the way of you satisfying your cravings without sabotaging your diet.

That’s what this recipe is all about – quick, easy, YUMMY!

Plus, it’s full of superfood goodness.

The key ingredient is chia, specifically the seed. Not those silly pet things that used to be everywhere around Christmas:

Chia is kind of like flax, but even better. First, It has a more mild taste than flax. Sometimes flax tastes like motor oil. Not that I would know! Second, chia seeds don’t have to be ground for you to absorb their nutrients like flax, making them more convenient. But flax is still good and variety is important; chia is just a step above.

Here are the top 3 benefits of eating chia seeds:

  1. They are rich in omega-3 fatty acids, which are good for weight loss, improving mood and keeping your brain healthy, to name a few
  2. They are very dense with antioxidants, so it keeps the omega-3 fats from oxidizing and gives you a nutrient boost
  3. They have a lot of fiber and form a unique gel (which makes this recipe work) that slows your digestion, keeping you full for longer and helping to balance your blood sugar

But how do you use them?

You can sprinkle them on salads, throw them in smoothies, put a spoon in oatmeal – you can pretty much ‘hide’ them anywhere because they have a very mild flavour. Even sneak them in your kids’ sandwiches to give them a nutrient boost.

Superfood Pudding

Divine Ingredients List

  • 1/4 cup chia seeds
  • 1 1/2 cup coconut milk beverage (can use any milk like almond, soy, etc)
  • 1 tbsp raw honey (heat it up a bit so it dissolves easily)
  • 1 tsp pure vanilla extract (or almond)
  • Optional: cocoa powder, cinnamon, other spices to your heart’s desire!
Directions (3 servings)

  1. Combine all ingredients and mix well with a spoon
  2. Let sit in fridge for at least 1 hour to thicken
  3. Stir and enjoy!

Nutritional Info (per serving): 208 calories, 6.8 g protein, 22.4 g carbs, 10.8 g fiber, 12.2 g fat

    Hi Stephanie – You will likely be able to find chia seeds at your local health food store. They also have them at Whole Foods. I’ve seen anything from about $6 to $12 for 8oz, so the pricing varies. You can also do a search and find them on Amazon and have them delivered to you if you do not live close to anywhere that might carry them. Happy baking!

    i made the chia pudding, but it didn’t look or taste anything like pudding. It was very rubbery. Did I do something wrong, I followed the recipe as directed?

    Thanks for trying the recipe! The texture is different than any packaged pudding for sure. I guess it can be described as a bit rubbery. But it’s full of great ingredients and is actually good for you, unlike the packaged stuff!

    Good morning Helen,
    i am not at home right now, I am up in Maine with my son looking for Assisted Living as I am 82 years old with the normal problems of aging.

    My home is in Massachusetts, but the Assisted Liviing there is too expensive, so I will be moving to Maine next month. Once I get settled, I intend to try ALL of your recipes………

    I’m not an expert in cancer, but Chia contains a lot of healthy things: omega-3 fats, which are good for everyone, fiber, and protein. They’re just a good, healthy food to add to your diet.

    I’m sorry these (Angel cookies did not pass the husband taste test or mine either. Part of the trouble might have been the dark chocolate cocoa that I used — it ruined a favorite chocolate cake recipe that I have had for many years — just too potent. Anyway I will try it again with a new box of chocolate. I’m all for your ideas and will try some more soon.
