Blondies Have More Fun

Gluten-Free Version

 (makes 8 servings)  

I’ve been making my “Blondies Have More Fun” recipe from my Heavenly Recipes Guide a lot lately. The base is generally the same – I use a can of navy beans – but I’ve been putting in different ingredients, depending on what’s in my pantry. The great thing about this recipe is that it always turns out. I’ve put in bananas, hemp hearts, and chia seeds, all in varying quantities, and the texture seems to hold up and the taste is similar (or better) than the original recipe.

I always get requests for gluten-free desserts, so I’m going to share with you my latest version of these blondies, which is gluten-free and of course all healthy!

Ingredients

  • 1 ½ cup canned and cooked navy beans (I use one 14oz can of Eden navy beans, rinsed and drained)
  • 2 tbsp olive oil or coconut oil, liquefied
  • 1 tsp baking soda + 1 tsp apple cider vinegar or 1 tsp baking powder (aluminum-free)
  • ¼ tsp sea salt
  • ½ tsp cinnamon
  • 2 large eggs
  • 1/2 cup almond flour (ground almonds)
  • ½ cup dark chocolate chips
  • 8 (about 60g) dried dates, chopped

Instructions

  • Pre-heat oven to 350F
  • Blend all ingredients (except chocolate chips) together in a blender or food processor until smooth
  • Add in chocolate chips and combine with spoon
  • Lightly coat a baking pan (I used a loaf 9x11 loaf pan) with oil
  • Pour batter into pan
  • Bake for 30-35 minutes until a toothpick inserted into the center comes out clean
  • Let stand for 20 minutes and then serve
