Easy-Peasy Banana Bread

 (makes 1 loaf)

Ingredients

• 1 1/2 cups rolled oats, ground (or substitute with whole wheat flour or gluten-free flour)
• 1 1/2 cups almond flour (ground almonds)
• 3 ripe bananas, mashed
• 2 eggs
• 1/4 cup unsweetened applesauce
• 1/4 cup coconut oil
• 2 tsp cinnamon (optional)
• 1/2 tsp allspice (optional)
• 1/2 tsp nutmeg (optional)
• 1/2 tsp ground cloves (optional)
• 1/4 tsp sea salt
• 1/4 cup dark chocolate chips
• 1 1/2 tsp baking powder (aluminum-free)

Instructions

1. In a medium bowl, combine all wet ingredients and mix well
2. In another medium bowl, combine all dry ingredients and mix well
3. Pour wet ingredients into dry ingredients
4. Bake at 375F for 50-65 minutes - check on the bread often to make sure it does not over bake – bread is ready when a toothpick inserted in the middle comes out clean

**TIP: when cut, bread is slightly wet even if when the toothpick comes out clean, it will harden up and become less wet when left to cool for a few hours

I love this recipe because it’s super easy to make – I just mash everything up, throw it in a pan and wait for it to rise!
