Heavenly Chocolate Chip Banana Bread Recipe

(makes 8 servings, yummy!)

A while back, I asked on Facebook what types of recipes my customers were most interested in. The overwhelming response was treats that were protein-packed. That’s when I started working on my 30-High Protein Treats Cookbook.

During the process of creating these treats, there was a lot of taste-testing going on in my house (not that hubby minded), and in the homes of my recipe testing angels. Everyone gave me such helpful and constructive feedback that only the best recipes made the cut. There were some though, that even though I loved myself, not everyone was a fan of.

One of those recipes that didn’t make it into the cookbook was my Heavenly Chocolate Chip Banana Bread. It was actually rated highly on taste, but it wasn’t included because I wanted to keep the treats to one of two forms of protein: whey and hemp. This banana bread does use hemp, but not hemp powder as the recipes in the cookbook use. It uses hemp hearts instead which I grind up. I suppose you can use hemp powder for this one too, but I have only tested it with the hemp hearts.

Note that you can also substitute with flax and more almond flour if you’re just not a fan of hemp in your desserts.

Heavenly Chocolate Chip Banana Bread Recipe

Ingredients
  1. ½ cup almond flour
  2. ½ cup hemp hearts (or substitute with ¼ cup flax seed + ¼ cup almond flour)
  3. 1 cup rolled oats
  4. 1/3 cup dark chocolate chips
  5. ¼ cup coconut oil, liquefied
  6. 3 bananas, mashed
  7. 3 eggs
  8. 1/4 tsp sea salt
  9. 1/2 tsp aluminum-free baking powder
  10. 1/2 tsp pure vanilla extract (optional)
  11. ½ – 1 tsp cinnamon (optional)
  12. 1/4 tsp ground cloves (optional)
  13. 1/4 tsp all spice (optional)
  14. 1/4 tsp nutmeg (optional)
Instructions
  1. Grind hemp hearts in a blender until it is smaller pieces (if using flax seed instead, grind flax seeds in blender until it is a fine powder) then set aside
  2. Grind rolled oats into a fine powder in the blender and set aside
  3. Combine all dry ingredients (except chocolate chips) in another medium bowl
  4. Combine wet and dry ingredients and add in chocolate chips
  5. Pour batter into a loaf pan that has been greased with oil
  6. Bake at 350F for 30-45 minutes (start checking at the 30 minute mark – bread is ready when toothpick inserted into the middle comes out clean)
  7. Enjoy!
Notes
  1. Each serving contains over 8g of protein, but each treat in my 30-High Protein Treats Cookbook contains at least 10g of protein per serving, which many containing 12g+ protein per serving (so it won’t disappoint if you’re trying to get more protein in your diet).
