Lemon Burst Protein Truffles

Makes 6 truffles (2 truffles per serving)


For those of you who need more protein in their diet, this lemon-y treat is exactly what you’re looking for.

3. It’s extremely yummy and healthy!

 

It is also one of my favourite recipes from the 30-High Protein Treats Cookbook (page 13) and I decided to share it with you, so you can enjoy these amazing healthy treats as well!

Ingredients

  • 1/3cup dates (about 10 dates), chopped after measuring
  • 1/4cup +2 tbsp walnut pieces
  • 2 tsp lemon juice
  • 1 tsp lemon rind
  • 2 scoops BioTrust Vanilla protein: find it here
  • About 2 tbsp chia seeds

  1. Place all ingredients except for chia seeds in a blender/food processor and combine
  2. Roll into balls
  3. Roll balls in a bowl of chia seeds to coat outside
  4. Fridge for around 20 minutes before eating

 

 

PROTEIN SUBSTITUTION – if you have another brand of protein powder, you can substitute it for BioTrust, but make  sure you use the same amount of protein.
