"Sexy in White" Healthy Oatmeal Cookies

 (makes 12 delicious cookies)  

These healthy oatmeal cookies are Dessert Angel Approved and free of SINgredients. This is one of my favorite recipes and I hope you'll enjoy it as well.

Ingredients

  • 1 cup rolled oats
  • 4 pinches pure stevia powder
  • 1/4 cup cocoa powder
  • Pinch of sea salt
  • 1 1/2 tsp pure vanilla extract
  • 1/4 cup extra virgin olive oil
  • 2 egg whites

Instructions

  1. Preheat oven to 350F
  2. Combine rolled oats, stevia, cocoa and salt in mixing bowl
  3. In a separate bowl, whisk together vanilla, olive oil and egg whites
  4. Pour wet into dry and mix with a fork until everything is mixed well
  5. Line baking sheet with parchment paper (lifesaver!) and drop some balls of batter on
  6. Press cookies down slightly with a fork to make them about a half inch thick
  7. Bake for 10-12 minutes until cookies are firm but not hard – they will harden a little more when they cool
