Here’s a healthy pancake recipe for you and your family. I cook it all the time, so I hope you will enjoy this recipe as well!

  • 1 cup coconut or almond milk
  • 4 eggs, room temperature
  • tsp pure vanilla extract
  • 1 tbsp honey or 2 pinches of stevia (more if you want sweeter)
  • 1/2 cup coconut flour
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • coconut oil or butter for frying




  1. Preheat pan over medium-low heat
  2. In a small bowl beat eggs until frothy, about two minutes
  3. Add milk, vanilla, and honey or stevia to bowl and mix
  4. In another bowl combine coconut flour, baking soda, and sea salt and whisk together
  5. Stir wet mixture into dry until coconut flour is incorporated
  6. Lightly grease pan with butter or coconut oil
  7. Drop a few tablespoons of batter into pan for each pancake
  8. Spread out slightly with the back of a spoon; the pancakes should be 2-3 inches in diameter and fairly thick
  9. Cook for a few minutes on each side, until the tops dry out slightly and the bottoms start to brown
  10. Flip and cook an additional 2-3 minutes
  11. Serve hot with your fave toppings
